Ingredients:
1 red pepper, diced
½ red onion, diced
¼ cup cilantro, chopped
1 orange pepper, diced
1 15 oz can of black beans, drained and rinsed
1 15 oz can of black eye peas, drained and rinsed
1 cup cooked corn or one 15oz can of corn kernels
Optional: 2 chopped jalapenos for some heat
diced avocado
Combine all ingredients in a bowl and mix well.
Dressing:
¼ cup olive oil
¼ cup apple cider vinegar
2 Tbs honey
¼ tsp garlic powder
¼ tsp cumin
⅛ cup lime juice (from fresh limes is best)
Sprinkle of salt and pepper
Wisk together or shake in a mason jar
Directions:
Mix all ingredients together a bowl or add to a mason jar and shake. Once dressing is mixed pour onto Cowboy Caviar and mix again. Makes an excellent side dish for taco night!
