Easy Cheesy Feta and Sausage Pasta

This quick and easy pasta dish is creamy, delicious and filled with protein.

Being a busy mom it's important to me to have healthy home made dinners that I can make in 30 minutes or less and this is one of my go to meals.


1 box of chickpea pasta (cooked according to directions

1 bunch of asparagus (spinach would work well also)

5 or 6 pre cooked parmigiana spinach chicken sausage links

1 block of feta in brine

2 pints of cherry tomatoes, washed and cleaned

Seasoning of your choice

Extra virgin olive oil

Locatelli cheese, optional


Directions:

Preheat oven to 425 degrees. In an oven safe dish place one block of feta with 1/2 cup of brine in the middle of the dish. Place the tomatoes in the dish around the feta. Drizzle with olive oil and your favorite seasoning. I love using Trader Joe's 21 Seasoning Salute but you can use a sprinkle of garlic powder, onion powder, Italian seasoning and pepper. No matter what seasoning you use this dish is going to be delicious! Place the dish in the oven for approximately 20 minutes while you are preparing your pasta.


Then, boil the water for pasta. While boiling, cut sausage into bite-sized pieces and cook in a frying pan until slightly brown. Once water has reached a boil, add pasta and chopped asparagus and cook through. Reserve 1 cup of water and then drain the pasta and asparagus and return it to the pot. At this point turn the oven off and broil the feta and tomato mixture just until the tops start to brown and the tomatoes start to pop.


When it's ready, take the feta out of the oven and carefully smash the tomatoes and feta (a meat chopper works well) being careful not to burn yourself as the tomatoes pop. Mix well until all of the feta and tomatoes have been incorporated. Add in just enough reserved pasta water until your mixture becomes saucy. Add your pasta sauce and sausage to your pasta and asparagus and toss to combine. Stir together and top with Locatelli cheese for some extra cheesy flavor. Enjoy!
