Proats a.k.a. Protein Oatmeal is great for balancing your blood sugar and giving you sustained energy throughout your morning. It's also easy to customize and change flavors which I love! Try leaving out the cacao powder and adding in vanilla and maple syrup!
Ingredients:
1 cup water
1/2 cup oatmeal
1/2 Tbs cacao powder
1/2 tsp cinnamon
1 tsp honey
2 eggs, beaten
Toppings:
Fruit
1 Tbs cacao nibs or chocolate chips
Melted nut butter
Shredded coconut
Nuts
Directions:
In a small pot, bring water to a boil then add in oatmeal. Cook for 4-5 mins. Add honey, cinnamon and cacao powder. Mix well then slowly add beaten eggs. Continue to stir or whisk oatmeal while you are adding the eggs and until the egg is completely incorporated and the oatmeal is fluffy. Not mixing the oatmeal while pouring in the eggs will result in cooked eggs and lumpy oatmeal so don't skip this step. Once the oatmeal is completely cooked, transfer to a bowl and add your desired toppings.
