These fluffy, flavorful pancakes are packed with protein, ensuring you stay full and energized all morning long. Unlike many protein-packed alternatives, these pancakes are delightfully light and tasty, with a texture that rivals traditional flapjacks. Perfect for breakfast or brunch, they're easy to make and can be customized with your favorite toppings. Ingredients:

1 cup of Pancake mix (I use Kodiak Buttermilk Pancake Mix)

3 eggs

1/2 cup Greek Yogurt

1/2 tsp Cinnamon

1 tsp Vanilla Extract

Butter


Directions:

1.Mix all ingredients together in a bowl except for butter. Let sit for two minutes until batter becomes fluffy. This will ensure that your pancakes are fluffy as you are cooking them.

2.Grease griddle or pan with butter.

3.Scoop pancake mix onto hot pan.

4.Cook 2-3 minutes or until pancakes begin to form small holes or bubbles then flip.

5.Continue cooking until pancakes are brown on both sides.

6.Top with your favorite fruit or syrup and serve hot.


Notes:

Recipe makes 8 pancakes.

My original recipe made with Kodiak Buttermilk Mix has 61 grams of protein for the entire recipe!
