Here's a simple and delicious Sheet Pan Fajitas recipe that’s perfect for a quick, healthy dinner!

Ingredients

  • 3 lb chicken breast or thighs, sliced into thin strips

  • 3 bell peppers (red, yellow, green), sliced

  • 1 large yellow onion, sliced

  • 1 large red onion, sliced

  • 3 tbsp olive oil

    Seasoning:

  • 1/2 tbsp paprika

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 1/2 tbsp chili powder

  • 2 tsp ground cumin

  • pinch of salt


For Serving:

  • Tortillas, warmed or served over rice

  • Fresh lime wedges

  • Fresh cilantro, chopped

  • Avocado slices


Directions

  1. Preheat Oven:

    • Preheat your oven to 425°F . Line a large baking sheet with parchment paper for easy cleanup.

  2. Prepare Ingredients:

    • Mix seasoning in a small bowl.

    • Toss chicken strips in seasoning.

    • Place chicken strips, bell peppers, and onions on the baking sheet.

  3. Season & Toss:

    • Drizzle oil over the chicken and veggies.

    • Toss everything together until well-coated, spreading the mixture into an even layer.

  4. Bake:

    • Bake for 18–20 minutes, or until the chicken is fully cooked (internal temperature of 165°F) and the veggies are tender.

  5. Broil (Optional):

    • For a charred finish, broil on high for an additional 2-3 minutes.

  6. Serve:

    • Squeeze fresh lime juice over the fajita mixture.

    • Sprinkle with chopped cilantro.

    • Serve with warmed tortillas, avocado slices, and extra lime wedges.


Tips & Variations:

  • Swap chicken for shrimp, steak, or tofu for different protein options.

  • Add extra veggies like zucchini or mushrooms for more variety.
