I called this recipe Silly Monkey Breakfast Cookies because it's a recipe that I created with my son. We both love cookies and these are a treat the whole family will love.
Ingredients:
2 ripe bananas
2 1/2 cups rolled oats
1 cup nut butter or sun butter
1/3 cup raw honey
1Tbs raw cacao
1/3 cup dark chocolate chips
1/2 cup chopped nuts (Brazil nuts taste amazing in this recipe)
1 tsp. pure vanilla extract
1/2 tsp cinnamon
1/4 tsp sea salt
1 tsp. Chia seeds
Directions:
Preheat oven to 350°. Line a baking sheet with parchment paper. Mash the bananas well then stir in the rest of the ingredients. Either using a cookie scoop or your hands roll the mixture into balls and slightly flatten with a fork. Bake for 17-20 minutes. Store or freeze in an airtight container. I like to double these for quick, easy, on the go breakfasts.
Notes:
This recipe is very versatile and great to make with children. Try adding unsweetened shredded coconut, white chocolate chips or raisins.
