Ingredients:
2 large stalks of rhubarb, chopped
Approximately 10 large strawberries, chopped
1 ½ cups of oatmeal
1 tsp vanilla extract
1 tsp cinnamon
¼ cup melted coconut oil
Directions:
Chop rhubarb and strawberries. In a large bowl mix them together. Spray a 9x9 baking dish. Evenly distribute the strawberry and rhubarb mixture into the baking dish. In another bowl mix the rest of the ingredients until just combined. Pour the oatmeal mixture over the strawberry rhubarb mixture. Spray the top with olive oil or coconut oil. Bake at 350 degrees for 25-35 minutes until the top is golden.
Strawberry Rhubarb Crumble is delicious alone but even more so when served over yogurt or with vanilla ice cream!
Notes:
Don't have strawberries? That's ok! Substitute your favorite berry and this recipe is still delicious!
